01 - 1 whole chicken (approximately 3.5 lbs), giblets removed
02 - 2 tablespoons olive oil
03 - 1 teaspoon sea salt
04 - ½ teaspoon freshly ground black pepper
05 - 1 lemon, halved
06 - 4 garlic cloves, crushed
07 - 2 sprigs fresh rosemary
08 - 2 sprigs fresh thyme

→ Vegetables

09 - 4 medium carrots, peeled and cut into chunks
10 - 3 medium potatoes, cut into wedges
11 - 2 parsnips, peeled and cut into chunks
12 - 1 large red onion, cut into wedges
13 - 1 tablespoon olive oil
14 - ½ teaspoon salt
15 - ¼ teaspoon black pepper

# How to Make:

01 - Set the oven temperature to 400°F (200°C).
02 - Pat the chicken dry with paper towels. Rub evenly with 2 tablespoons olive oil, 1 teaspoon salt, and ½ teaspoon black pepper. Stuff the cavity with lemon halves, crushed garlic, rosemary, and thyme.
03 - In a large roasting pan, combine carrots, potatoes, parsnips, and red onion. Toss with 1 tablespoon olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper, then spread out evenly.
04 - Place the chicken on top of the vegetable mixture, breast side up. Tuck wings underneath the body.
05 - Roast for 1 hour and 15 minutes, or until the juices run clear when the thickest part of the thigh is pierced and a meat thermometer registers 165°F (75°C).
06 - Allow the chicken to rest for 10 minutes before carving. Serve alongside the roasted vegetables.
