A creamy mix of avocado, chickpeas, and fresh herbs paired with crunchy baked pita chips.

# What You Need:

→ Green Avocado Hummus

01 - 1 ripe avocado, peeled and pitted
02 - 1 can (15 oz) chickpeas, drained and rinsed
03 - 3 tablespoons tahini
04 - 2 tablespoons fresh lime juice
05 - 1 small garlic clove, minced
06 - 2 tablespoons olive oil
07 - 1/4 cup fresh cilantro or parsley leaves
08 - 1/2 teaspoon ground cumin
09 - 1/4 teaspoon sea salt, or to taste
10 - 2-3 tablespoons cold water, as needed

→ Pita Chips

11 - 4 pita breads, white or whole wheat
12 - 2 tablespoons olive oil
13 - 1/2 teaspoon sea salt
14 - 1/2 teaspoon smoked paprika or zaatar

# How to Make:

01 - Preheat the oven to 375°F for baking the pita chips.
02 - Cut each pita bread into 8 triangles. Arrange them on a baking sheet in a single layer without overlapping.
03 - Brush pita triangles evenly with olive oil and sprinkle with sea salt and smoked paprika or zaatar, if using.
04 - Bake for 8-10 minutes until golden brown and crisp. Remove from oven and let cool completely.
05 - Combine avocado, chickpeas, tahini, lime juice, garlic, olive oil, cilantro or parsley, cumin, and salt in a food processor.
06 - Blend until completely smooth, adding cold water 1 tablespoon at a time as needed to reach desired creamy consistency.
07 - Taste and adjust seasoning with additional salt or lime juice if necessary. Transfer to a serving bowl, drizzle with olive oil, and garnish with extra herbs. Serve alongside cooled pita chips.

# Expert Advice:

01 -
  • The avocado makes it impossibly creamy without needing extra oil or heavy ingredients
  • It comes together in under 20 minutes but looks like something from a fancy restaurant
  • The pita chips bake up perfectly crisp and somehow disappear faster than the hummus itself
02 -
  • The hummus will darken slightly over time due to the avocado, but a squeeze of fresh lime juice over the top helps maintain the color
  • Room temperature ingredients blend more smoothly than cold ones straight from the fridge
  • The pita chips continue crisping as they cool, so don't worry if they seem slightly soft when you first pull them out
03 -
  • Reserve a few chickpeas to sprinkle on top for texture and visual appeal
  • Press plastic wrap directly onto the surface if storing to prevent browning
