04 - Fill each jalapeño half with the cheese mixture, smoothing the top.
05 - Wrap each stuffed jalapeño half with a half-slice of beef bacon, securing with a toothpick if needed.
06 - Arrange the poppers on the prepared baking sheet, cheese side up.
07 - Bake for 20 to 25 minutes, or until the bacon is crisp and the cheese is bubbly and golden.
08 - Remove from oven and let cool for a few minutes. Garnish with fresh cilantro and serve warm with sour cream if desired.

# Expert Advice:

01 -
  • The beef bacon gets perfectly crispy without any pork while adding this incredible depth of flavor
  • They are actually deceptively simple but make you look like you put in serious effort
02 -
  • Wear gloves when handling jalapeños or you will regret it hours later when you touch your face
  • The first time I made these I did not secure the bacon with toothpicks and half of it unwrapped in the oven
03 -
  • Pat the jalapeños dry with paper towels before stuffing so the filling sticks better
  • Cook the bacon for 5 minutes before wrapping if you want it extra crispy
